Description

This rustic Italian tortellini soup with sausage is a hearty one-pot meal filled with savory sausage, tender tortellini, spinach, and a creamy tomato broth. Perfect for cozy weeknight dinners, this comforting soup comes together quickly and is packed with Italian-inspired flavor.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound bulk Italian sausage
  • 1 onion, chopped
  • 1 tablespoon garlic, chopped
  • 1 can tomato sauce (8 ounces)
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/8 teaspoon red pepper flakes, or to taste
  • 4 cups chicken broth
  • 1/4 cup heavy cream
  • 9 ounces tortellini
  • 8 ounces spinach
  • Grated Parmesan cheese, for serving

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the Italian sausage and chopped onion. Cook for 5 to 7 minutes, breaking up the sausage as it browns.
  3. Stir in the garlic and cook for about 1 minute until fragrant.
  4. Add the tomato sauce, Italian seasoning, salt, black pepper, and red pepper flakes. Stir well to combine.
  5. Pour in the chicken broth and heavy cream, stirring until smooth.
  6. Add the tortellini and cook for about 5 minutes.
  7. Stir in the spinach and continue cooking for 2 to 3 minutes, or until the spinach is wilted and the tortellini is tender.
  8. Serve hot topped with grated Parmesan cheese if desired.

Notes

  • Use spicy Italian sausage for extra heat and flavor.
  • Swap spinach for kale or Swiss chard if preferred.
  • Frozen tortellini can be used; simply increase the cooking time slightly.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Add extra broth when reheating if the soup thickens.
  • Serve with crusty bread or a side salad for a complete meal.
