Description

Izakaya-style salted cabbage, known as ‘shio kyabetsu’, is a simple yet flavorful Japanese appetizer often served at pubs. It’s made with fresh cabbage, seasoned with sesame oil, salt, garlic, and sometimes a hint of umami from dashi or MSG.


Ingredients

  • 300g cabbage (about 1/2 small head)
  • 1 tbsp sesame oil
  • 1/2 tsp salt (or to taste)
  • 1 clove garlic (grated or minced)
  • 1/2 tsp msg or dashi powder (optional)
  • Toasted sesame seeds (for garnish)
  • Chopped spring onions (for garnish, optional)

Instructions

  1. Remove the core from the cabbage and chop it into bite-sized pieces.
  2. Rinse the cabbage thoroughly and drain well.
  3. In a large mixing bowl, add the cabbage, sesame oil, salt, garlic, and optional MSG or dashi powder.
  4. Toss everything together until the cabbage is evenly coated with the seasonings.
  5. Transfer to a serving plate and top with toasted sesame seeds and chopped spring onions if using.
  6. Serve immediately or chill slightly before serving.

Notes

  • This dish is best enjoyed fresh but can be stored in the fridge for a few hours before serving.
  • Adjust salt and garlic to taste.
