Description

Ingredients

  • 2 servings udon noodles
  • 2 cups dashi stock
  • 1 cup water
  • 2 blocks Japanese curry roux
  • 1/2 onion, thinly sliced
  • 1 clove garlic, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon neutral oil
  • 1 tablespoon soy sauce
  • 1 teaspoon mirin
  • 1/2 cup sliced mushrooms
  • 1/2 cup cooked chicken or tofu
  • 2 green onions, sliced

Instructions

  1. Cook the udon noodles according to package instructions, drain, and set aside.
  2. Heat oil in a saucepan over medium heat and sauté the onion until soft.
  3. Add garlic and ginger, cooking until fragrant.
  4. Stir in mushrooms and protein, cooking briefly.
  5. Add dashi stock and water, bring to a gentle simmer.
  6. Turn off the heat and dissolve the curry roux into the broth.
  7. Return to low heat and simmer until slightly thickened.
  8. Season with soy sauce and mirin.
  9. Add cooked udon noodles to the soup and heat through.
  10. Serve hot, garnished with green onions.
