Ingredients
- 2 servings udon noodles
- 2 cups dashi stock
- 1 cup water
- 2 blocks Japanese curry roux
- 1/2 onion, thinly sliced
- 1 clove garlic, minced
- 1 teaspoon grated ginger
- 1 tablespoon neutral oil
- 1 tablespoon soy sauce
- 1 teaspoon mirin
- 1/2 cup sliced mushrooms
- 1/2 cup cooked chicken or tofu
- 2 green onions, sliced
Instructions
- Cook the udon noodles according to package instructions, drain, and set aside.
- Heat oil in a saucepan over medium heat and sauté the onion until soft.
- Add garlic and ginger, cooking until fragrant.
- Stir in mushrooms and protein, cooking briefly.
- Add dashi stock and water, bring to a gentle simmer.
- Turn off the heat and dissolve the curry roux into the broth.
- Return to low heat and simmer until slightly thickened.
- Season with soy sauce and mirin.
- Add cooked udon noodles to the soup and heat through.
- Serve hot, garnished with green onions.
