Description

John Wayne Casserole is a hearty, Tex-Mex inspired dish layered with ground beef, taco seasoning, a biscuit base, vegetables, and a creamy, cheesy topping. It’s a comforting and satisfying dinner perfect for family meals.


Ingredients

  • 1 (16.3 oz) can refrigerated biscuit dough
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 green bell pepper, chopped
  • 1/2 cup chopped onion
  • 1 (10 oz) can diced tomatoes with green chiles, drained
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Press biscuit dough into the bottom of a 9×13-inch baking dish to form a crust. Bake for 10 minutes until lightly golden.
  3. Meanwhile, cook ground beef in a skillet over medium heat until browned. Drain excess grease.
  4. Add taco seasoning and water to the beef. Stir to combine and simmer for 5 minutes.
  5. Add chopped bell pepper, onion, and drained tomatoes to the beef mixture. Cook for another 5 minutes until vegetables soften.
  6. In a separate bowl, mix sour cream, mayonnaise, half of the cheddar and Monterey Jack cheese, salt, and pepper.
  7. Spread the beef and vegetable mixture over the pre-baked biscuit crust.
  8. Spread the sour cream and cheese mixture evenly over the beef layer.
  9. Top with the remaining cheddar and Monterey Jack cheese.
  10. Bake uncovered for 30–35 minutes, until cheese is melted and bubbly.
  11. Let sit for 5–10 minutes before serving.

Notes

  • You can substitute ground turkey or chicken for a lighter option.
  • Adjust spice level by choosing mild or hot diced tomatoes with green chiles.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
