John Wayne Casserole is a hearty, Tex-Mex inspired dish layered with ground beef, taco seasoning, a biscuit base, vegetables, and a creamy, cheesy topping. It’s a comforting and satisfying dinner perfect for family meals.
Ingredients
- 1 (16.3 oz) can refrigerated biscuit dough
- 1 lb ground beef
- 1 packet taco seasoning
- 1/2 cup water
- 1 green bell pepper, chopped
- 1/2 cup chopped onion
- 1 (10 oz) can diced tomatoes with green chiles, drained
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 350°F (175°C).
- Press biscuit dough into the bottom of a 9×13-inch baking dish to form a crust. Bake for 10 minutes until lightly golden.
- Meanwhile, cook ground beef in a skillet over medium heat until browned. Drain excess grease.
- Add taco seasoning and water to the beef. Stir to combine and simmer for 5 minutes.
- Add chopped bell pepper, onion, and drained tomatoes to the beef mixture. Cook for another 5 minutes until vegetables soften.
- In a separate bowl, mix sour cream, mayonnaise, half of the cheddar and Monterey Jack cheese, salt, and pepper.
- Spread the beef and vegetable mixture over the pre-baked biscuit crust.
- Spread the sour cream and cheese mixture evenly over the beef layer.
- Top with the remaining cheddar and Monterey Jack cheese.
- Bake uncovered for 30–35 minutes, until cheese is melted and bubbly.
- Let sit for 5–10 minutes before serving.
Notes
- You can substitute ground turkey or chicken for a lighter option.
- Adjust spice level by choosing mild or hot diced tomatoes with green chiles.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat individual portions in the microwave or bake to re-crisp the crust.
