Description

Joy Cookies are a delightful blend of coconut, almonds, and chocolate—reminiscent of the classic candy bar! With chewy coconut, crunchy almonds, and rich chocolate chips, these cookies are a sweet treat perfect for any occasion.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup sweetened shredded coconut
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup chopped almonds

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Gently fold in the shredded coconut, chocolate chips, and chopped almonds.
  6. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10–12 minutes, or until the edges are golden and the centers are set.
