Description

A flavorful and healthy one-pan meal made with juicy ground turkey, tender green beans, and sweet potatoes. Perfect for meal prep or a quick weeknight dinner.


Ingredients

  • 1 lb ground turkey
  • 1 medium sweet potato, peeled and diced
  • 2 cups green beans, trimmed and halved
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Optional: red pepper flakes for heat

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add the diced sweet potatoes and cook for about 10 minutes, stirring occasionally, until they begin to soften.
  3. Push sweet potatoes to the side and add the remaining tablespoon of olive oil.
  4. Add the diced onion and cook for 2-3 minutes until translucent.
  5. Add garlic and cook for another 30 seconds until fragrant.
  6. Add the ground turkey to the skillet and break it apart with a spatula. Cook until browned and fully cooked through.
  7. Season the mixture with paprika, garlic powder, salt, pepper, and optional red pepper flakes.
  8. Add the green beans and cook for another 5–7 minutes until they are tender but still crisp.
  9. Stir everything together, adjust seasoning if needed, and serve hot.

Notes

  • You can swap ground turkey with ground chicken or beef.
  • For extra flavor, add a splash of soy sauce or coconut aminos.
