Description
A flavorful and healthy one-pan meal made with juicy ground turkey, tender green beans, and sweet potatoes. Perfect for meal prep or a quick weeknight dinner.
Ingredients
- 1 lb ground turkey
- 1 medium sweet potato, peeled and diced
- 2 cups green beans, trimmed and halved
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- Optional: red pepper flakes for heat
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the diced sweet potatoes and cook for about 10 minutes, stirring occasionally, until they begin to soften.
- Push sweet potatoes to the side and add the remaining tablespoon of olive oil.
- Add the diced onion and cook for 2-3 minutes until translucent.
- Add garlic and cook for another 30 seconds until fragrant.
- Add the ground turkey to the skillet and break it apart with a spatula. Cook until browned and fully cooked through.
- Season the mixture with paprika, garlic powder, salt, pepper, and optional red pepper flakes.
- Add the green beans and cook for another 5–7 minutes until they are tender but still crisp.
- Stir everything together, adjust seasoning if needed, and serve hot.
Notes
- You can swap ground turkey with ground chicken or beef.
- For extra flavor, add a splash of soy sauce or coconut aminos.
