Description

A tropical, indulgent cake bursting with sweet, tangy pineapple flavor and a soft, moist sponge. Perfect for any occasion or simply treating yourself.


Ingredients

1 box of yellow cake mix

1 can of crushed pineapple (with juice)

1/2 cup unsalted butter (melted)

1 cup sugar

1/4 teaspoon vanilla extract

3 eggs

1/4 cup milk

1 cup shredded coconut (optional)

Whipped cream or frosting for topping (optional)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large mixing bowl, combine the cake mix, eggs, milk, melted butter, sugar, and vanilla extract. Stir until fully mixed and smooth.
  3. Pour the batter into the prepared baking dish.
  4. Drain the pineapple, but reserve the juice. Add the pineapple over the batter evenly, spreading it out as much as possible.
  5. Pour the reserved pineapple juice over the batter and pineapple.
  6. If you’re using shredded coconut, sprinkle it evenly on top.
  7. Bake for 35-40 minutes or until a toothpick comes out clean from the center of the cake.
  8. Allow the cake to cool for about 10 minutes before serving. Optionally, top with whipped cream or frosting for an extra indulgence.

Notes

  1. You can add chopped walnuts or pecans for extra crunch.
  2. For a more coconut flavor, use coconut milk or add coconut cream to the batter.
  3. Pineapple slices can be used instead of crushed pineapple for a different look.
  4. Consider adding a light cream cheese frosting or coconut-flavored frosting for more indulgence.
