Description

Ingredients
1 box of yellow cake mix
1 can of crushed pineapple (with juice)
1/2 cup unsalted butter (melted)
1 cup sugar
1/4 teaspoon vanilla extract
3 eggs
1/4 cup milk
1 cup shredded coconut (optional)
Whipped cream or frosting for topping (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a large mixing bowl, combine the cake mix, eggs, milk, melted butter, sugar, and vanilla extract. Stir until fully mixed and smooth.
- Pour the batter into the prepared baking dish.
- Drain the pineapple, but reserve the juice. Add the pineapple over the batter evenly, spreading it out as much as possible.
- Pour the reserved pineapple juice over the batter and pineapple.
- If you’re using shredded coconut, sprinkle it evenly on top.
- Bake for 35-40 minutes or until a toothpick comes out clean from the center of the cake.
- Allow the cake to cool for about 10 minutes before serving. Optionally, top with whipped cream or frosting for an extra indulgence.
Notes
- You can add chopped walnuts or pecans for extra crunch.
- For a more coconut flavor, use coconut milk or add coconut cream to the batter.
- Pineapple slices can be used instead of crushed pineapple for a different look.
- Consider adding a light cream cheese frosting or coconut-flavored frosting for more indulgence.
