Description
Kashmiri Pink Chai, also known as Noon Chai, is a traditional tea from the Kashmir region. This vibrant and flavorful beverage is made with green tea leaves, milk, and a hint of spices, giving it a warm, comforting flavor and its signature pink hue.
Ingredients
2 teaspoons Kashmiri tea leaves (or green tea leaves)
2 cups water
1–2 cinnamon sticks
3–4 green cardamom pods
1/4 teaspoon baking soda
1 cup milk (full-fat or milk alternative)
Sugar or salt, to taste
Instructions
- In a pot, add the Kashmiri tea leaves, water, cinnamon sticks, and cardamom pods.
- Bring the mixture to a boil and simmer on low heat for about 10-15 minutes until the tea develops a deep red color.
- Add the baking soda to the boiling tea and stir gently to create the signature pink color.
- Gradually pour in the milk and let it simmer for another 5-10 minutes, allowing the chai to thicken and become rich and creamy.
- Add sugar or salt to taste, depending on whether you prefer a sweet or savory version of the chai.
- Strain the chai into cups and serve hot.
Notes
- For a sweetened version, add sugar or honey.
- For a vegan option, use plant-based milk like almond or oat milk.
- For extra spice, add a pinch of ginger or cloves.
- This chai can also be enjoyed cold as a refreshing iced drink.
- Leftovers can be stored in an airtight container for up to 2 days. Reheat gently over low heat, adding milk if needed.
