Description
Soft and buttery cookies inspired by classic Kentucky Butter Cake, topped with a sweet vanilla glaze.
Ingredients
- 1 box white cake mix
- 2 eggs, whisked
- 1/3 cup butter, melted
- 1/4 cup butter (for glaze)
- 1/2 cup granulated sugar (for glaze)
- 1 tbsp water (for glaze)
- 1 tsp vanilla extract (for glaze)
- Powdered sugar, for garnish
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine the cake mix, whisked eggs, and melted butter. Mix until a thick dough forms.
- Use a medium cookie scoop or heaping tablespoon to portion the dough onto a parchment-lined baking sheet.
- Bake for 7-8 minutes, then remove from the oven and let cool on the baking sheet for 4-5 minutes before transferring to a cooling rack.
- Repeat with remaining dough.
- For the glaze, combine butter, sugar, water, and vanilla in a small saucepan.
- Cook over medium-low heat, whisking constantly, until the sugar dissolves (about 4 minutes).
- Spoon about a teaspoon of glaze over each cookie, spreading gently if needed.
- Allow glaze to set, then sprinkle cookies with powdered sugar.
- Store cookies in an airtight container at room temperature for up to 3 days.
Notes
- Dough will be thick; use a sturdy spoon or hands to mix.
- Do not overbake—cookies should be soft.
- Glaze can be doubled for extra sweetness.
- Optional: add a pinch of salt to balance sweetness.
