Ingredients
1/2 cup peanut butter (sugar-free, creamy)
1/4 cup coconut oil, melted
1/4 cup unsweetened cocoa powder
1/4 cup powdered erythritol (or preferred keto sweetener)
1 tsp vanilla extract
Pinch of salt
1/4 cup sugar-free chocolate chips (optional)
Instructions
- In a mixing bowl, combine the peanut butter, melted coconut oil, unsweetened cocoa powder, powdered erythritol, vanilla extract, and a pinch of salt.
- Stir until smooth and all ingredients are fully incorporated.
- If using, fold in the sugar-free chocolate chips for a little extra crunch and chocolate flavor.
- Line a mini muffin tin with paper liners or use silicone molds for easy removal.
- Spoon the mixture into each compartment, filling them about 3/4 full.
- Place the muffin tin in the freezer for at least 1 hour or until the fat bombs are solid.
- Once set, remove the fat bombs from the molds and store them in an airtight container.
Notes
- Store fat bombs in an airtight container in the freezer for up to 2 weeks.
- Can be kept in the fridge for a few days, but they may soften at room temperature.
- If you prefer a softer texture, let them sit at room temperature for a few minutes before eating.
- Optional variations include using almond butter, adding chopped nuts, or substituting sugar-free white chocolate chips for the chocolate chips.
