Description

This creamy and tangy Key Lime Fudge combines the sweetness of white chocolate with the zesty flavor of key lime juice for a unique tropical treat, perfect for summer gatherings or as a refreshing dessert.


Ingredients

  • 2 cups granulated white sugar
  • 3/4 cup unsalted butter
  • 1 (5-ounce) can evaporated milk
  • 1 (12-ounce) package white chocolate chips
  • 1 (7-ounce) jar marshmallow creme
  • 1/4 cup key lime juice (freshly squeezed or bottled)
  • 1 teaspoon grated lime zest (from about 2 limes)
  • 1 teaspoon vanilla extract
  • 2 to 3 drops green food coloring (optional)
  • Graham cracker crumbs, for garnish (optional)

Instructions

  1. Line an 8-inch square baking pan with aluminum foil or parchment paper and set aside.
  2. In a medium saucepan, combine the sugar, butter, and evaporated milk. Stir over medium heat until the mixture comes to a boil. Continue to boil for 5 minutes, stirring constantly.
  3. Remove the saucepan from the heat and stir in the white chocolate chips until melted and smooth.
  4. Add the marshmallow creme, key lime juice, lime zest, vanilla extract, and green food coloring (if using). Stir until well combined and smooth.
  5. Pour the fudge mixture into the prepared baking pan and spread it out evenly.
  6. If desired, sprinkle graham cracker crumbs over the top of the fudge for garnish.
  7. Refrigerate the fudge for at least 2 hours, or until firm.
  8. Once the fudge is firm, use the foil or parchment paper to lift it out of the pan. Cut into squares and serve.
  9. Store any leftover fudge in an airtight container in the refrigerator.

  • For best flavor, use freshly squeezed key lime juice.
  • Graham cracker crumbs add a nice texture and flavor contrast on top.
