Description
This creamy and tangy Key Lime Fudge combines the sweetness of white chocolate with the zesty flavor of key lime juice for a unique tropical treat, perfect for summer gatherings or as a refreshing dessert.
Ingredients
- 2 cups granulated white sugar
- 3/4 cup unsalted butter
- 1 (5-ounce) can evaporated milk
- 1 (12-ounce) package white chocolate chips
- 1 (7-ounce) jar marshmallow creme
- 1/4 cup key lime juice (freshly squeezed or bottled)
- 1 teaspoon grated lime zest (from about 2 limes)
- 1 teaspoon vanilla extract
- 2 to 3 drops green food coloring (optional)
- Graham cracker crumbs, for garnish (optional)
Instructions
- Line an 8-inch square baking pan with aluminum foil or parchment paper and set aside.
- In a medium saucepan, combine the sugar, butter, and evaporated milk. Stir over medium heat until the mixture comes to a boil. Continue to boil for 5 minutes, stirring constantly.
- Remove the saucepan from the heat and stir in the white chocolate chips until melted and smooth.
- Add the marshmallow creme, key lime juice, lime zest, vanilla extract, and green food coloring (if using). Stir until well combined and smooth.
- Pour the fudge mixture into the prepared baking pan and spread it out evenly.
- If desired, sprinkle graham cracker crumbs over the top of the fudge for garnish.
- Refrigerate the fudge for at least 2 hours, or until firm.
- Once the fudge is firm, use the foil or parchment paper to lift it out of the pan. Cut into squares and serve.
- Store any leftover fudge in an airtight container in the refrigerator.
Notes
- For best flavor, use freshly squeezed key lime juice.
- Graham cracker crumbs add a nice texture and flavor contrast on top.
- Green food coloring is optional but adds a fun visual hint of lime flavor.
- This fudge can be made ahead and stored in the fridge for up to a week.
