Description

These Key Lime Pie Sandwich Cookies combine soft, chewy graham-flavored cookies with a tangy and sweet key lime buttercream filling. They taste just like a slice of key lime pie in cookie form!


Ingredients

  • 1 cup butter, room temperature
  • 1 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 cup graham cracker crumbs (about 9 full crackers)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter, room temperature (for filling)
  • 4 ounces cream cheese, room temperature (for filling)
  • 2 1/2 cups powdered sugar (for filling)
  • 2 tablespoons key lime juice (for filling)
  • 1 teaspoon key lime zest (for filling)

Instructions

  1. Preheat oven to 350°F. Line baking sheets with parchment paper and set aside.
  2. In the bowl of a stand mixer, beat the butter, brown sugar, and granulated sugar together on medium speed until light and fluffy.
  3. Add in the eggs and vanilla and mix until combined.
  4. In a separate bowl, whisk together the flour, graham cracker crumbs, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Using a cookie scoop, drop dough onto prepared baking sheets about 2 inches apart.
  7. Bake for 8–10 minutes, until edges are lightly golden. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  8. To make the filling, beat the butter and cream cheese together until smooth.
  9. Add in the powdered sugar, key lime juice, and zest. Beat until creamy and well combined.
  10. Spread or pipe filling onto the flat side of one cookie and sandwich with another cookie.

Notes

  • You can substitute regular lime juice if key limes are unavailable.
  • Cookies can be stored in an airtight container in the refrigerator for up to 5 days.
  • Let cookies sit at room temperature for a few minutes before serving if refrigerated.
