A refreshing and tangy Kiwi, Lime & Mint Cooler that’s perfect for warm weather. This non-alcoholic drink combines the sweetness of ripe kiwis with zesty lime and fresh mint for a revitalizing beverage.
Ingredients
- 4 ripe kiwifruits, peeled and chopped
- 1/4 cup fresh lime juice
- 2 tablespoons honey or to taste
- 2 cups chilled soda water or sparkling water
- 1 cup ice cubes
- 1/2 cup fresh mint leaves, plus extra to garnish
- Lime slices, to serve
Instructions
- Place the chopped kiwifruit, lime juice, honey, and mint leaves in a blender.
- Blend until smooth.
- Pour the mixture through a fine sieve into a jug to remove pulp, pressing with the back of a spoon to extract as much liquid as possible.
- Add soda water and stir to combine.
- Fill glasses with ice cubes and pour the cooler over the top.
- Garnish with extra mint leaves and lime slices. Serve immediately.
Notes
- Adjust the honey to your preferred sweetness level.
- You can use plain water or coconut water as a soda water alternative.
- For a slushie version, blend with crushed ice.
