Description

A refreshing and tangy Kiwi, Lime & Mint Cooler that’s perfect for warm weather. This non-alcoholic drink combines the sweetness of ripe kiwis with zesty lime and fresh mint for a revitalizing beverage.


Ingredients

  • 4 ripe kiwifruits, peeled and chopped
  • 1/4 cup fresh lime juice
  • 2 tablespoons honey or to taste
  • 2 cups chilled soda water or sparkling water
  • 1 cup ice cubes
  • 1/2 cup fresh mint leaves, plus extra to garnish
  • Lime slices, to serve

Instructions

  1. Place the chopped kiwifruit, lime juice, honey, and mint leaves in a blender.
  2. Blend until smooth.
  3. Pour the mixture through a fine sieve into a jug to remove pulp, pressing with the back of a spoon to extract as much liquid as possible.
  4. Add soda water and stir to combine.
  5. Fill glasses with ice cubes and pour the cooler over the top.
  6. Garnish with extra mint leaves and lime slices. Serve immediately.

Notes

  • Adjust the honey to your preferred sweetness level.
  • You can use plain water or coconut water as a soda water alternative.
  • For a slushie version, blend with crushed ice.
