Ingredients
- 2 pounds red potatoes, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 lemon, zested and juiced
- 4 cloves garlic, minced
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 1 tablespoon chopped fresh parsley (optional, for garnish)
Instructions
- Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
- In a large bowl, combine potatoes, olive oil, lemon zest, lemon juice, garlic, salt, and pepper. Toss until evenly coated.
- Spread potatoes in a single layer on the prepared baking sheet.
