Ingredients
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- ½ cup unsalted butter, melted
- 1 cup granulated sugar
- 2 tablespoons lemon zest (about 2 lemons)
- 2 large eggs
- ½ cup milk
- 2 tablespoons fresh lemon juice
- 1 cup fresh or frozen blueberries
- 1 tablespoon flour (for coating blueberries)
- ½ cup powdered sugar (for glaze)
- 2 tablespoons fresh lemon juice (for glaze)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, rub the sugar and lemon zest together with your fingers until fragrant.
- Add the melted butter to the sugar mixture and whisk until combined.
- Beat in the eggs one at a time, then mix in the lemon juice and milk.
- Gradually fold the dry ingredients into the wet mixture until just combined, being careful not to overmix.
- Toss the blueberries with 1 tablespoon flour to help prevent sinking, then gently fold them into the batter.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 60–70 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Whisk together the powdered sugar and lemon juice until smooth to make the glaze, then drizzle it over the cooled bread before slicing.
Notes
- If using frozen blueberries, do not thaw them before adding to the batter.
- Coating blueberries in flour helps keep them evenly distributed in the bread.
- Store the bread in an airtight container at room temperature for up to 3 days.
- This loaf can also be frozen for up to 2 months when tightly wrapped.
- For extra lemon flavor, add additional lemon zest to the glaze.
