Ingredients
- 1/2 cup rolled oats
- 1 tablespoon chia seeds
- 1/2 cup plain Greek yogurt
- 1/2 cup unsweetened almond milk (or milk of choice)
- 1 tablespoon maple syrup (or honey)
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon lemon zest
- 1/2 cup fresh or frozen blueberries
- Pinch of salt
Instructions
- In a jar or container, combine the oats, chia seeds, Greek yogurt, almond milk, maple syrup, lemon juice, lemon zest, and salt.
- Stir well to fully combine all ingredients.
- Gently fold in the blueberries.
- Cover and refrigerate overnight or for at least 4 hours.
- In the morning, stir the oats. Add a splash of milk if desired for consistency.
- Top with extra blueberries, lemon zest, or a drizzle of honey before serving, if desired.

- You can use dairy or non-dairy yogurt and milk depending on preference or dietary needs.
