Description

Featuring tender salmon fillets topped with a zesty lemon butter sauce, crispy roasted potatoes, and perfectly cooked broccoli, it’s a flavorful dish that’s easy to prepare and perfect for any night of the week.


Ingredients

  • 2 salmon fillets
  • 2 medium potatoes, diced
  • 1 head of broccoli, cut into florets
  • 2 tbsp olive oil
  • 3 tbsp butter
  • 2 cloves garlic, minced
  • 1 lemon, zested and juiced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Toss diced potatoes with 1 tbsp olive oil, salt, and pepper. Spread them on a baking sheet and roast for 15 minutes.
  3. Meanwhile, mix butter, garlic, lemon zest, and juice in a small saucepan over low heat until melted and combined.
  4. After 15 minutes, add broccoli florets and salmon fillets to the baking sheet. Drizzle everything with remaining olive oil and some of the lemon butter sauce.
  5. Return the sheet to the oven and roast for another 12-15 minutes, or until salmon is cooked through and potatoes are crispy.
  6. Remove from oven and drizzle remaining lemon butter sauce over the salmon.
  7. Garnish with chopped parsley before serving.
