Description

This Lemon Garlic Shrimp Pasta is a light, flavorful dish made with tender shrimp, garlic, lemon juice, and parsley, tossed with spaghetti for a quick and elegant meal ready in under 30 minutes.


Ingredients

  • 8 ounces dry spaghetti
  • 1 tablespoon olive oil
  • 1 pound large shrimp, peeled and deveined
  • 4 garlic cloves, minced
  • 1/4 teaspoon red pepper flakes
  • Zest of 1 lemon
  • 3 tablespoons fresh lemon juice
  • 1/4 teaspoon kosher salt, or to taste
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons butter

Instructions

  1. Cook spaghetti according to package instructions until al dente. Drain, reserving 1/2 cup of the pasta water.
  2. While pasta cooks, heat olive oil in a large skillet over medium-high heat.
  3. Add shrimp and cook for 1-2 minutes per side, until just opaque. Transfer to a plate.
  4. Reduce heat to medium and add garlic and red pepper flakes to the skillet. Sauté for about 30 seconds.
  5. Add lemon zest, lemon juice, salt, and pepper; stir to combine.
  6. Return shrimp to the skillet and toss to coat.
  7. Add cooked pasta, parsley, butter, and a splash of reserved pasta water. Toss to combine, adding more pasta water as needed to loosen the sauce.
  8. Serve immediately, garnished with additional parsley if desired.

Notes

  • Use fresh lemon juice for the best flavor.
  • Don’t overcook the shrimp; they should be just opaque.
  • Add more red pepper flakes if you like it spicier.
  • You can substitute linguine or fettuccine for spaghetti.
