Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 2 tbsp lime juice
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp dried oregano
- 1/4 tsp chili flakes (optional)
- Fresh parsley or cilantro, for garnish
Instructions
- In a small bowl, whisk together olive oil, lemon juice, lime juice, garlic, salt, pepper, paprika, oregano, and chili flakes.
- Place chicken breasts in a large zip-top bag or shallow dish and pour marinade over them. Refrigerate for at least 30 minutes (up to 2 hours).
- Preheat grill or grill pan over medium-high heat.
- Remove chicken from marinade and grill for 5–6 minutes per side, or until fully cooked (internal temp 165°F).
- Let chicken rest for 5 minutes before slicing.
- Garnish with chopped parsley or cilantro and serve with a side salad, rice, or grilled vegetables.
Notes
- This marinade also works well with chicken thighs or drumsticks.
- For extra flavor, marinate overnight.
- Serve leftovers cold over salad or in wraps for a refreshing lunch.
- You can bake the chicken at 400°F for 20–25 minutes if you don’t have a grill.
