Description
This Lemon Herb Grilled Chicken is a flavorful and juicy dish made with a simple marinade of lemon juice, olive oil, garlic, and herbs. It’s perfect for grilling season and works well for meal prep or weeknight dinners.
Ingredients
- 4 boneless skinless chicken breasts
- 1/4 cup olive oil
- 1/4 cup lemon juice (freshly squeezed)
- 2 cloves garlic (minced)
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried basil
- 1 tsp dried parsley
- 1/2 tsp dried thyme
Instructions
- In a bowl, whisk together the olive oil, lemon juice, minced garlic, salt, pepper, basil, parsley, and thyme.
- Place chicken breasts in a large resealable bag or container and pour the marinade over the chicken.
- Seal and marinate in the refrigerator for at least 30 minutes, preferably 2–3 hours.
- Preheat grill to medium-high heat.
- Remove chicken from the marinade and place on the grill.
- Grill chicken for 5–7 minutes per side, or until the internal temperature reaches 165°F (75°C).
- Remove from grill and let rest for 5 minutes before serving.
Notes
- Use freshly squeezed lemon juice for the best flavor.
- Marinate longer for deeper flavor, but no more than 8 hours.
- This chicken can also be cooked on a stovetop grill pan or baked in the oven.
- Leftovers are great sliced over salads or in wraps.
