Description

This Lemon Herb Grilled Chicken is a flavorful and juicy dish made with a simple marinade of lemon juice, olive oil, garlic, and herbs. It’s perfect for grilling season and works well for meal prep or weeknight dinners.


Ingredients

  • 4 boneless skinless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup lemon juice (freshly squeezed)
  • 2 cloves garlic (minced)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried basil
  • 1 tsp dried parsley
  • 1/2 tsp dried thyme

Instructions

  1. In a bowl, whisk together the olive oil, lemon juice, minced garlic, salt, pepper, basil, parsley, and thyme.
  2. Place chicken breasts in a large resealable bag or container and pour the marinade over the chicken.
  3. Seal and marinate in the refrigerator for at least 30 minutes, preferably 2–3 hours.
  4. Preheat grill to medium-high heat.
  5. Remove chicken from the marinade and place on the grill.
  6. Grill chicken for 5–7 minutes per side, or until the internal temperature reaches 165°F (75°C).
  7. Remove from grill and let rest for 5 minutes before serving.

Notes

  • Use freshly squeezed lemon juice for the best flavor.
  • Marinate longer for deeper flavor, but no more than 8 hours.
  • This chicken can also be cooked on a stovetop grill pan or baked in the oven.
  • Leftovers are great sliced over salads or in wraps.
