Description

Ingredients

1 1/2 cups all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1 large egg

1 tablespoon lemon zest (about 2 lemons)

1 tablespoon dried lavender buds

2 tablespoons fresh lemon juice

1/2 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  4. Add the egg, lemon zest, lavender buds, lemon juice, and vanilla extract to the butter mixture. Mix until well combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
  7. Gently press down on each dough ball with the back of a spoon to slightly flatten them.
  8. Bake for 10-12 minutes, or until the edges of the cookies begin to turn golden brown.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
