Description

Soft, buttery cookies with a bright lemon flavor that melt in your mouth, finished with a dusting of powdered sugar for a sweet, tangy treat.


Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup powdered sugar
  • 1 tablespoon fresh lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • Extra powdered sugar for coating

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone mat.
  2. In a large mixing bowl, beat the softened butter and powdered sugar together until light and creamy.
  3. Add the lemon zest, lemon juice, and vanilla extract to the mixture, and beat until fully combined.
  4. In a separate bowl, whisk together the flour, cornstarch, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
  6. Scoop out 1-tablespoon portions of dough and roll into balls. Place them on the prepared baking sheet about 2 inches apart.
  7. Bake for 12-14 minutes, or until the bottoms are lightly golden. Do not overbake.
  8. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
  9. Once cooled, roll each cookie in powdered sugar to coat completely. For extra sweetness, roll them a second time.
