These Lemon Pepper Chicken Skewers are marinated in a zesty, peppery blend and grilled to perfection, making them a quick and flavorful dish perfect for weeknight dinners or summer cookouts.
Ingredients
- 2 pounds boneless, skinless chicken breasts, cut into 1½-inch cubes
- ⅓ cup olive oil
- 3 tablespoons lemon juice (freshly squeezed)
- 1 tablespoon lemon zest
- 2 teaspoons kosher salt
- 2 teaspoons black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon crushed red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
Instructions
- In a large bowl, whisk together olive oil, lemon juice, lemon zest, salt, pepper, garlic powder, onion powder, and red pepper flakes.
- Add the chicken cubes to the marinade, tossing to coat evenly. Cover and refrigerate for at least 30 minutes, up to 2 hours.
- Preheat the grill to medium-high heat and lightly oil the grates.
- Thread the marinated chicken cubes onto skewers, leaving a bit of space between each piece for even cooking.
- Grill the skewers for 10–12 minutes, turning occasionally, until the chicken is cooked through and has a nice char.
- Remove from the grill and let rest for a few minutes. Garnish with chopped parsley and serve with lemon wedges.
Notes
- Soak wooden skewers in water for at least 30 minutes before grilling to prevent burning.
- Marinate the chicken for up to 2 hours for best flavor, but no more to avoid over-marination from the lemon juice.
- Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).
