Description

These Lemon Pepper Chicken Skewers are marinated in a zesty, peppery blend and grilled to perfection, making them a quick and flavorful dish perfect for weeknight dinners or summer cookouts.


Ingredients

  • 2 pounds boneless, skinless chicken breasts, cut into -inch cubes
  • ⅓ cup olive oil
  • 3 tablespoons lemon juice (freshly squeezed)
  • 1 tablespoon lemon zest
  • 2 teaspoons kosher salt
  • 2 teaspoons black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon crushed red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. In a large bowl, whisk together olive oil, lemon juice, lemon zest, salt, pepper, garlic powder, onion powder, and red pepper flakes.
  2. Add the chicken cubes to the marinade, tossing to coat evenly. Cover and refrigerate for at least 30 minutes, up to 2 hours.
  3. Preheat the grill to medium-high heat and lightly oil the grates.
  4. Thread the marinated chicken cubes onto skewers, leaving a bit of space between each piece for even cooking.
  5. Grill the skewers for 10–12 minutes, turning occasionally, until the chicken is cooked through and has a nice char.
  6. Remove from the grill and let rest for a few minutes. Garnish with chopped parsley and serve with lemon wedges.

Notes

  • Soak wooden skewers in water for at least 30 minutes before grilling to prevent burning.
  • Marinate the chicken for up to 2 hours for best flavor, but no more to avoid over-marination from the lemon juice.
