Ingredients
- 6 boneless, skinless chicken thighs
- 2 tablespoons olive oil
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 1 tablespoon lemon pepper seasoning
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 4 burger buns
- 4 lettuce leaves
- 1 large tomato, sliced
- 1/2 red onion, sliced
- 4 tablespoons mayonnaise (optional)
Instructions
- In a bowl, whisk together olive oil, lemon zest, lemon juice, lemon pepper seasoning, garlic powder, salt, and black pepper.
- Add the chicken thighs and coat evenly. Marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
- Preheat a grill or skillet over medium-high heat.
- Cook the chicken thighs for 5–7 minutes per side, or until fully cooked and internal temperature reaches 165°F (75°C).
- Lightly toast the burger buns on the grill or in a toaster.
- Assemble the burgers by placing lettuce, grilled chicken thigh, tomato slices, and red onion on the bottom bun.
- Spread mayonnaise on the top bun if desired, then close the burger and serve immediately.
Notes
- For extra flavor, marinate the chicken overnight.
- You can substitute chicken breasts if preferred.
