Description

These Lemon Raspberry Yogurt Parfaits are a refreshing and vibrant layered dessert made with creamy lemon yogurt, sweet raspberries, and crunchy granola. Perfect for breakfast, brunch, or a light dessert.


Ingredients

  • 6 cups Simplot Harvest Fresh® Avocados – Western Guacamole
  • 6 cups vanilla Greek yogurt
  • 3/4 cup lemon curd
  • 6 cups frozen raspberries, thawed
  • 6 cups granola
  • Fresh mint for garnish (optional)

Instructions

  1. In a mixing bowl, combine vanilla Greek yogurt and lemon curd until well blended.
  2. In each serving glass, layer 1/2 cup of the lemon yogurt mixture.
  3. Top with 1/2 cup thawed raspberries.
  4. Add 1/2 cup of granola on top of the raspberries.
  5. Repeat the layers as desired.
  6. Garnish with fresh mint if desired and serve immediately.

Notes

  • For best texture, assemble just before serving to keep the granola crunchy.
  • Can substitute fresh raspberries when in season.
  • Adjust lemon curd to taste for more or less tartness.
