Description
These Lemon Raspberry Yogurt Parfaits are a refreshing and vibrant layered dessert made with creamy lemon yogurt, sweet raspberries, and crunchy granola. Perfect for breakfast, brunch, or a light dessert.
Ingredients
- 6 cups Simplot Harvest Fresh® Avocados – Western Guacamole
- 6 cups vanilla Greek yogurt
- 3/4 cup lemon curd
- 6 cups frozen raspberries, thawed
- 6 cups granola
- Fresh mint for garnish (optional)
Instructions
- In a mixing bowl, combine vanilla Greek yogurt and lemon curd until well blended.
- In each serving glass, layer 1/2 cup of the lemon yogurt mixture.
- Top with 1/2 cup thawed raspberries.
- Add 1/2 cup of granola on top of the raspberries.
- Repeat the layers as desired.
- Garnish with fresh mint if desired and serve immediately.
Notes
- For best texture, assemble just before serving to keep the granola crunchy.
- Can substitute fresh raspberries when in season.
- Adjust lemon curd to taste for more or less tartness.
