Description

These Lemon Sweet Rolls are soft, fluffy, and bursting with fresh lemon flavor. Perfect for breakfast, brunch, or a special treat, they are topped with a tangy lemon glaze and filled with a sweet lemon sugar filling.


Ingredients

  • 1 cup warm milk (110°F)
  • 2¼ tsp active dry yeast
  • ½ cup granulated sugar
  • ⅓ cup unsalted butter, melted
  • 2 eggs
  • ½ tsp salt
  • 4½ cups all-purpose flour
  • ½ cup unsalted butter, softened (for filling)
  • ¾ cup granulated sugar (for filling)
  • Zest of 2 lemons (for filling)
  • 2 cups powdered sugar (for glaze)
  • 23 tbsp lemon juice (for glaze)
  • 1 tbsp lemon zest (for glaze)

Instructions

  1. In a large mixing bowl, combine warm milk and yeast. Let sit for 5–10 minutes until foamy.
  2. Add sugar, melted butter, eggs, and salt. Mix until combined.
  3. Gradually add flour and mix until a soft dough forms.
  4. Knead the dough for about 5–7 minutes, until smooth and elastic.
  5. Place dough in a greased bowl, cover, and let rise in a warm place for 1 hour or until doubled in size.
  6. Mix the softened butter, sugar, and lemon zest for the filling in a small bowl.
  7. Roll out the dough on a floured surface into a 16×12 inch rectangle.
  8. Spread the lemon filling evenly over the dough.
  9. Roll up the dough tightly from the long side and cut into 12 rolls.
  10. Place rolls in a greased 9×13 inch baking dish. Cover and let rise for 30 minutes.
  11. Preheat oven to 350°F (175°C). Bake for 20–25 minutes or until golden brown.
  12. While rolls are baking, whisk together powdered sugar, lemon juice, and lemon zest to make the glaze.
  13. Remove rolls from oven and drizzle with lemon glaze while warm.
