Description

A light and creamy Greek yogurt Jello cheesecake that’s lower in calories but full of flavor. Made with a simple graham cracker crust and a fluffy yogurt filling, this easy dessert is perfect for a refreshing and healthier treat.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 1 (3 oz) package sugar-free strawberry Jello
  • 1 cup boiling water
  • 1 cup plain nonfat Greek yogurt
  • 8 oz reduced-fat cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup light whipped topping

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until evenly coated.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
  4. Bake for 8–10 minutes, then remove from the oven and allow to cool completely.
  5. In a separate bowl, dissolve the sugar-free Jello in boiling water, stirring until fully dissolved. Let it cool to room temperature.
  6. In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
  7. Add the Greek yogurt, powdered sugar, and vanilla extract. Mix until well combined and smooth.
  8. Slowly pour the cooled Jello mixture into the cream cheese mixture, blending until fully incorporated.
  9. Gently fold in the light whipped topping until the filling is smooth and fluffy.
  10. Pour the filling over the cooled crust and smooth the top with a spatula.
  11. Refrigerate for at least 4 hours, or until fully set.
  12. Remove from the pan, slice, and serve chilled.

  • You can substitute different flavors of sugar-free Jello to change the taste.
