Description
A light and creamy Greek yogurt Jello cheesecake that’s lower in calories but full of flavor. Made with a simple graham cracker crust and a fluffy yogurt filling, this easy dessert is perfect for a refreshing and healthier treat.
Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 2 tablespoons granulated sugar
- 1 (3 oz) package sugar-free strawberry Jello
- 1 cup boiling water
- 1 cup plain nonfat Greek yogurt
- 8 oz reduced-fat cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup light whipped topping
Instructions
- Preheat oven to 350°F (175°C).
- In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until evenly coated.
- Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
- Bake for 8–10 minutes, then remove from the oven and allow to cool completely.
- In a separate bowl, dissolve the sugar-free Jello in boiling water, stirring until fully dissolved. Let it cool to room temperature.
- In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
- Add the Greek yogurt, powdered sugar, and vanilla extract. Mix until well combined and smooth.
- Slowly pour the cooled Jello mixture into the cream cheese mixture, blending until fully incorporated.
- Gently fold in the light whipped topping until the filling is smooth and fluffy.
- Pour the filling over the cooled crust and smooth the top with a spatula.
- Refrigerate for at least 4 hours, or until fully set.
- Remove from the pan, slice, and serve chilled.
Notes
- Ensure the Jello mixture has cooled before adding it to prevent curdling.
- You can substitute different flavors of sugar-free Jello to change the taste.
- For a firmer texture, refrigerate overnight.
- Store leftovers covered in the refrigerator for up to 3 days.
