Description

Ingredients
- 1 unbaked 9-inch pie crust
- 2 cups whole milk
- 1/2 cup heavy cream
- 1/4 cup fresh lilac blossoms, lightly packed and rinsed
- 1/2 cup honey
- 3 large eggs
- 2 large egg yolks
- 1/4 cup granulated sugar
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 1/4 teaspoon fine sea salt
- Fresh lilac blossoms, for garnish
Instructions
- Preheat the oven to 350°F. Fit the pie crust into a 9-inch pie plate and crimp the edges as desired.
- In a saucepan over low heat, combine the milk, heavy cream, and lilac blossoms. Warm gently until steaming but not boiling, then remove from the heat and let steep for 15 minutes.
- Strain out the lilac blossoms and return the infused milk mixture to the saucepan. Stir in the honey.
- In a mixing bowl, whisk together the eggs, egg yolks, sugar, cornstarch, vanilla extract, and salt until smooth.
- Slowly pour the warm lilac milk into the egg mixture while whisking constantly to temper the eggs.
- Pour the custard into the prepared pie crust.
- Bake for 40 to 45 minutes, or until the edges are set and the center still has a slight wobble.
- Cool the pie completely on a wire rack, then chill for at least 2 hours before slicing.
- Garnish with fresh lilac blossoms before serving, if desired.

- Use only unsprayed, food-safe lilac blossoms and remove any green stems before infusing.
- For the best texture, let the pie chill fully before slicing.
- Store leftovers covered in the refrigerator for up to 3 days.
