Description

Loaded Baked Potato Salad combines all the flavors of a classic baked potato with the creamy, cool texture of a potato salad. This dish is perfect for barbecues, potlucks, or any casual gathering, offering a hearty and satisfying side dish that everyone will love.

Ingredients

6 medium-sized potatoes

4 slices of bacon

1 cup sour cream

1 cup mayonnaise

1 ½ cups shredded sharp cheddar cheese

3 green onions, chopped

Salt and pepper, to taste

1 tablespoon apple cider vinegar (optional)

Instructions

  1. Start by boiling the potatoes in a large pot of salted water for about 12-15 minutes or until they are tender but still firm. Once done, drain and set aside to cool completely.
  2. While the potatoes are cooling, cook the bacon in a skillet over medium heat until crispy, about 6-8 minutes. Remove from heat, crumble the bacon, and set it aside.
  3. Once the potatoes have cooled, peel them (if desired) and chop them into bite-sized pieces.
  4. In a large mixing bowl, combine the sour cream, mayonnaise, cheddar cheese, green onions, and a pinch of salt and pepper. Stir everything together until well combined.
  5. Add the chopped potatoes and crumbled bacon to the bowl. Mix gently to combine all ingredients.
  6. If you like a slight tang, add the apple cider vinegar and stir until incorporated.
  7. Taste and adjust the seasoning with more salt, pepper, or additional sour cream if desired.
  8. Refrigerate the salad for at least 1 hour before serving to allow the flavors to meld together.

Notes

  1. This dish can be made ahead of time and stored in the fridge for up to 3 days.
  2. If you prefer a vegetarian or vegan option, skip the bacon or replace it with plant-based bacon.
  3. For extra flavor, add fresh herbs like parsley, dill, or thyme to the dressing.
  4. For a spicy kick, you can add jalapeños or drizzle with hot sauce before serving.
