Description

A hearty and cheesy casserole featuring ground beef, BBQ sauce, corn, and pasta, topped with melted cheddar for a satisfying meal perfect for the whole family.


Ingredients

  • 1 lb ground beef
  • 1 cup cheddar cheese, shredded
  • 1 can corn kernels, drained
  • 1 cup cooked pasta (penne or elbow)
  • 1/2 cup BBQ sauce
  • 1/2 cup diced onions
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef with diced onions, salt, and pepper over medium heat until browned and fully cooked. Drain any excess fat.
  3. In a large mixing bowl, combine the cooked pasta, browned beef mixture, drained corn, BBQ sauce, and shredded cheddar cheese. Stir to combine all ingredients evenly.
  4. Transfer the mixture into a greased baking dish and spread it out evenly.
  5. Bake for 20-25 minutes, or until the casserole is bubbly and the cheese is golden and melted on top.
  6. Remove from the oven and let it sit for a few minutes before serving.

Notes

  • You can use any short pasta like rotini or macaroni if penne or elbow aren’t available.
  • For a spicier kick, add some chopped jalapeños or a dash of hot sauce.
