Loaded fries are the ultimate comfort food—crispy fries layered with melty cheese, smoky bacon, and bold toppings like jalapeños and green onions. Perfect for sharing or serving at parties, they’re easy to customize and absolutely crave-worthy.
Ingredients
1½–2 lb frozen or homemade fries (crinkle, curly, steak, or waffle cut)
6–8 slices bacon, cooked and crumbled
1½ cups shredded cheddar cheese
1 cup mozzarella, Monterey Jack, or pepper jack cheese (optional)
2–3 stalks green onions, sliced (white and green parts separated)
Pickled jalapeños, to taste (optional)
Sour cream or ranch dressing, for garnish and dipping
3 Tbsp butter (for cheese sauce)
3 Tbsp all-purpose flour (for cheese sauce)
2 cups whole milk (for cheese sauce)
¼ cup heavy cream or 1 cup brown gravy (optional for drizzle)
Instructions
- Preheat oven to 425°F (220°C). Bake fries according to package instructions until crispy (about 25–30 minutes).
- Cook bacon until crispy, then crumble and set aside.
- If making cheese sauce, melt butter in a saucepan over medium heat. Whisk in flour, then slowly add milk while whisking constantly. Stir in cheese until smooth and creamy.
- On a baking dish or platter, layer half the fries. Top with half the cheese (sauce or shredded), half the bacon, and white parts of green onions.
- Repeat with remaining fries, cheese, and toppings.
- Broil for 1–3 minutes, just until cheese is bubbly and melted.
- Garnish with green onion tops, pickled jalapeños, and dollops of sour cream or ranch.
- Serve immediately while hot and crispy.
Notes
- Customize toppings with chili, ground beef, mac & cheese, or pulled pork.
- Use air-fried fries and lighter toppings for a healthier version.
- Store leftovers in an airtight container for up to 3 days.
- Reheat in oven at 400°F for 4–6 minutes for best texture.
