Description

Ingredients

  • 4 cups potatoes, peeled and diced
  • 4 cups chicken broth
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 cup cooked and crumbled beef sausage
  • 1 small onion, diced
  • 2 tablespoons butter
  • Salt, to taste
  • Pepper, to taste
  • Optional toppings: sour cream, sliced green onions, extra cheese

Instructions

  1. Melt the butter in a large pot over medium heat. Add the diced onion and sauté until softened and fragrant.
  2. Add the diced potatoes and chicken broth. Bring to a boil, then reduce the heat and simmer for 15–20 minutes, or until the potatoes are fork-tender.
  3. For a thicker texture, lightly mash some of the potatoes in the pot while leaving some chunks for texture.
  4. Stir in the milk, heavy cream, and shredded cheddar cheese. Cook over low heat, stirring continuously, until the cheese is fully melted and the soup is smooth and creamy.
  5. Stir in the cooked and crumbled beef sausage. Season with salt and pepper to taste.
  6. Ladle into bowls and garnish with sour cream and sliced green onions if desired. Serve warm.
