Ingredients
- 4 cups potatoes, peeled and diced
- 4 cups chicken broth
- 1 cup milk
- 1/2 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 cup cooked and crumbled beef sausage
- 1 small onion, diced
- 2 tablespoons butter
- Salt, to taste
- Pepper, to taste
- Optional toppings: sour cream, sliced green onions, extra cheese
Instructions
- Melt the butter in a large pot over medium heat. Add the diced onion and sauté until softened and fragrant.
- Add the diced potatoes and chicken broth. Bring to a boil, then reduce the heat and simmer for 15–20 minutes, or until the potatoes are fork-tender.
- For a thicker texture, lightly mash some of the potatoes in the pot while leaving some chunks for texture.
- Stir in the milk, heavy cream, and shredded cheddar cheese. Cook over low heat, stirring continuously, until the cheese is fully melted and the soup is smooth and creamy.
- Stir in the cooked and crumbled beef sausage. Season with salt and pepper to taste.
- Ladle into bowls and garnish with sour cream and sliced green onions if desired. Serve warm.
