Ingredients
2 boneless, skinless chicken breasts
1/2 cup grated Parmesan cheese
1/2 cup breadcrumbs (preferably Italian-style)
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
1/4 cup all-purpose flour
1 egg, beaten
2 tablespoons olive oil
1/4 cup heavy cream
1/4 cup chicken broth
1 tablespoon butter
Fresh parsley, chopped (optional, for garnish)
Instructions
-
Preheat oven to 400°F (200°C).
-
In a shallow dish, combine Parmesan cheese, breadcrumbs, garlic powder, onion powder, salt, and pepper.
-
Dredge chicken breasts in flour, dip into beaten egg, then coat with breadcrumb mixture.
-
Heat olive oil in an oven-safe skillet over medium-high heat. Cook chicken for 4-5 minutes per side until golden brown.
-
Transfer skillet to the oven and bake for 15-20 minutes, until the chicken reaches an internal temperature of 165°F (75°C).
-
While the chicken bakes, melt butter in a separate pan over medium heat. Add chicken broth and bring to a simmer. Stir in heavy cream and simmer for 3-5 minutes until slightly thickened. Season with salt and pepper to taste.
-
Remove chicken from the oven and pour the creamy sauce over it. Garnish with parsley, if desired.
Notes
- For extra flavor, add a pinch of red pepper flakes to the breadcrumb mixture.
- You can substitute boneless, skinless chicken thighs for a juicier option.
- Make sure the chicken is fully coated in the flour, egg, and breadcrumb mixture for a crispy finish.
