Ingredients
- 2 medium zucchinis, sliced into 1/4-inch thick strips
- 2 eggs, whisked
- 1 cup panko breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray
Instructions
- Preheat the air fryer to 400°F (200°C).
- Slice the zucchini into thin strips about 1/4-inch thick.
- In a shallow bowl, whisk the eggs.
- In another bowl, mix together the panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and black pepper.
- Dip each zucchini strip into the egg mixture, then coat it evenly with the breadcrumb mixture.
- Place the coated zucchini fries in a single layer in the air fryer basket. Do not overcrowd.
- Lightly spray the fries with cooking spray to help them crisp up.
- Air fry for 8–10 minutes, flipping halfway through, until golden brown and crispy.
- Serve immediately with your favorite dipping sauce.
