Description

Ingredients

1 1/2 cups all-purpose flour

1/2 cup sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon ground cinnamon

1/2 cup milk

1/4 cup unsalted butter, melted

1 large egg

1 teaspoon vanilla extract

4 oz cream cheese, softened

1/4 cup powdered sugar

1/2 teaspoon ground cinnamon (for the filling)

1/4 cup brown sugar (for the filling)


Instructions

Preheat oven to 350°F (175°C). Line muffin tin with paper liners or grease the cups.

In a medium bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon.

In another bowl, whisk together milk, melted butter, egg, and vanilla extract.

Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

In a small bowl, mix softened cream cheese, powdered sugar, and cinnamon until smooth.

Spoon a small amount of muffin batter into each muffin cup, filling halfway. Add a dollop of cream cheese mixture and top with more batter.

In a small bowl, mix brown sugar and cinnamon, then sprinkle over the muffins.

Bake for 20-25 minutes, or until a toothpick comes out clean.

Cool for 5 minutes in the tin before transferring to a wire rack.
