Description
This warm, cinnamon-spiced apple fritter bread is filled with tender apple pieces and finished with a sweet vanilla glaze. Perfect for cozy fall mornings or a comforting homemade dessert.
Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 2 large eggs
- 1/2 cup unsalted butter, melted
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 2 large apples, peeled, cored, and chopped

- 1 cup powdered sugar
- 2–3 tablespoons milk (for glaze)
- 1/2 teaspoon vanilla extract (for glaze)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- In a large bowl, combine the flour, granulated sugar, brown sugar, salt, baking powder, and ground cinnamon.
- In a separate bowl, whisk together the eggs, melted butter, milk, and vanilla extract. Add the wet ingredients to the dry ingredients and stir until just combined.
- In a small bowl, toss the chopped apples with 1/4 cup granulated sugar and 1 teaspoon ground cinnamon.
- Pour half of the batter into the prepared loaf pan. Layer with half of the apple mixture. Pour the remaining batter over the apples and top with the remaining apple mixture. Lightly press the apples into the batter.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- For the glaze, whisk together the powdered sugar, milk, and vanilla extract until smooth. Drizzle over the cooled bread before slicing and serving.
Notes
- Use firm apples like Granny Smith or Honeycrisp for best texture.
- Do not overmix the batter to keep the bread tender.
- Store covered at room temperature for up to 2 days or refrigerate for up to 5 days.
- This bread freezes well for up to 2 months when tightly wrapped.
