Description

This Mango Chicken Salad combines tender chicken, juicy mango, crisp vegetables, and a tangy, creamy dressing to create a refreshing and satisfying dish perfect for lunch or a light dinner.


Ingredients

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tbsp fresh lime juice
  • 2 tsp honey
  • 1 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 1/4 tsp ground cayenne pepper
  • 4 cups chopped cooked chicken breast
  • 1 large mango, peeled and chopped
  • 1/2 cup chopped red bell pepper
  • 1/2 cup thinly sliced celery
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • Butter lettuce leaves, for serving (optional)

Instructions

  1. In a large bowl, whisk together mayonnaise, sour cream, lime juice, honey, salt, pepper, and cayenne until smooth.
  2. Add the chicken, mango, red bell pepper, celery, red onion, and cilantro to the bowl with the dressing.
  3. Toss everything together gently until well combined and evenly coated in the dressing.
  4. Refrigerate the salad for at least 30 minutes to allow the flavors to meld.
