This Mango Salsa Chicken is a fresh and flavorful dish made with juicy grilled or pan-seared chicken breasts topped with a vibrant mango salsa. It’s the perfect combination of sweet, savory, and slightly spicy, ideal for summer meals or healthy weeknight dinners.
Ingredients
- 4 boneless skinless chicken breasts
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- ½ teaspoon ground cumin
- ½ teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- 2 ripe mangos, diced
- 1 red bell pepper, diced
- ¼ cup finely chopped red onion
- ¼ cup chopped fresh cilantro
- 1 jalapeño, seeded and finely chopped
- Juice of 1 lime
- Salt to taste
Instructions
- In a small bowl, stir together chili powder, garlic powder, cumin, onion powder, salt, and pepper.
- Rub the seasoning mixture over both sides of the chicken breasts.
- Heat olive oil in a skillet over medium-high heat.
- Add chicken breasts and cook for 6–8 minutes on each side or until cooked through and golden brown on the outside. Remove from heat and set aside.
- While the chicken is cooking, prepare the mango salsa by combining diced mango, red bell pepper, red onion, cilantro, jalapeño, lime juice, and a pinch of salt in a bowl. Mix well.
- Spoon mango salsa over the cooked chicken and serve immediately.
Notes
- Use ripe but firm mangos for the best texture in the salsa.
- Adjust the heat by using more or less jalapeño according to taste.
- This recipe pairs well with rice, quinoa, or a fresh green salad.
