Ingredients
- 2 acorn squash (about 2.5 lbs total)
- 4 Tbsp unsalted butter, melted
- 3 Tbsp pure maple syrup
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/2 tsp fine sea salt
- 1/4 tsp freshly ground black pepper
Instructions
- Preheat the oven to 400°F (204°C) and line a baking sheet with parchment paper.
- Cut the acorn squash in half lengthwise, scoop out the seeds, then cut into 3/4” thick slices.
- In a large bowl, whisk together melted butter, maple syrup, cinnamon, nutmeg, salt, and pepper.
- Add the sliced squash to the bowl and toss to coat evenly with the maple mixture.
- Arrange the squash slices in a single layer on the prepared baking sheet.
- Roast for 25–30 minutes, flipping halfway through, until the squash is golden and tender.
- Serve warm and enjoy!

- Choose acorn squash that feel heavy for their size and have a dark green color.
