Description

Marry Me Salmon is a creamy, flavorful salmon dish made with sun-dried tomatoes, garlic, parmesan, and a touch of cream. It’s a quick and easy one-pan dinner that’s perfect for impressing guests or enjoying a cozy weeknight meal.

Ingredients

  • 2 salmon fillets (6 oz each, skin-on or skinless)
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 3 garlic cloves, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/3 cup grated parmesan cheese
  • 1/4 cup sun-dried tomatoes (chopped)
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Fresh basil, for garnish (optional)

Instructions

  1. Season the salmon fillets with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium heat. Add salmon, skin-side down if applicable, and sear for 4-5 minutes per side until golden and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, melt the butter over medium heat. Add minced garlic and red pepper flakes, and sauté for about 1 minute until fragrant.
  4. Pour in chicken broth and simmer for 2 minutes to reduce slightly.
  5. Add heavy cream, parmesan cheese, sun-dried tomatoes, oregano, and thyme. Stir well and let the sauce simmer for 3-4 minutes until thickened.
  6. Return the salmon to the skillet and spoon the sauce over the fillets. Simmer for 2-3 minutes to heat through.
  7. Garnish with fresh basil if desired and serve hot.

Notes

  • You can use jarred sun-dried tomatoes in oil for added flavor.
  • Serve with pasta, mashed potatoes, or crusty bread to soak up the sauce.
  • Adjust red pepper flakes to control spice level.
  • Use skinless salmon if preferred, but searing skin-on gives a crispy texture.
