Description

These Mediterranean quesadillas are a quick and flavorful twist on a classic, packed with hummus, fresh vegetables, and melty cheese. Perfect for a fast lunch or light dinner.


Ingredients

  • 4 large flour tortillas
  • 1/2 cup hummus
  • 1 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 cup fresh spinach
  • 1/2 cup roasted red peppers, sliced
  • 1/4 cup sliced black olives
  • 1 tablespoon olive oil

Instructions

  1. Lay out the tortillas on a flat surface and spread hummus evenly over one side of each tortilla.
  2. Sprinkle mozzarella and feta cheese over half of each tortilla.
  3. Add spinach, roasted red peppers, and olives evenly over the cheese.
  4. Fold each tortilla in half to form a semicircle.
  5. Heat olive oil in a skillet over medium heat.
  6. Cook each quesadilla for 2-3 minutes per side, or until golden brown and the cheese is melted.
  7. Remove from heat, slice into wedges, and serve warm.

Notes

  • Swap spinach with arugula or kale for a different flavor.
  • Add grilled chicken if you want extra protein.
