Ingredients
- 4 large flour tortillas
- 1/2 cup hummus
- 1 cup shredded mozzarella cheese
- 1/2 cup crumbled feta cheese
- 1 cup fresh spinach
- 1/2 cup roasted red peppers, sliced
- 1/4 cup sliced black olives
- 1 tablespoon olive oil
Instructions
- Lay out the tortillas on a flat surface and spread hummus evenly over one side of each tortilla.
- Sprinkle mozzarella and feta cheese over half of each tortilla.
- Add spinach, roasted red peppers, and olives evenly over the cheese.
- Fold each tortilla in half to form a semicircle.
- Heat olive oil in a skillet over medium heat.
- Cook each quesadilla for 2-3 minutes per side, or until golden brown and the cheese is melted.
- Remove from heat, slice into wedges, and serve warm.
Notes
