Ingredients
- 2 cups fresh spinach, finely chopped
- 1 cup crumbled feta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1/4 cup almond flour
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1/2 teaspoon dried oregano
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a skillet over medium heat, warm olive oil and sauté garlic for 30 seconds until fragrant.
- Add chopped spinach and cook until wilted, about 2–3 minutes. Remove from heat and allow to cool slightly. Squeeze out excess moisture.
- In a mixing bowl, combine spinach, feta, mozzarella, Parmesan, egg, almond flour, oregano, salt, and black pepper. Mix until well combined.
- Scoop tablespoon-sized portions onto the prepared baking sheet and flatten slightly into thin rounds.
- Bake for 12–15 minutes or until edges are golden and crisp.
- Allow crisps to cool for 5 minutes before serving to firm up.
Notes
- Ensure excess moisture is removed from the spinach to achieve crispy results.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat in the oven or air fryer to restore crispness.
