Description

Ingredients

  • 2 cups fresh spinach, finely chopped
  • 1 cup crumbled feta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 cup almond flour
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a skillet over medium heat, warm olive oil and sauté garlic for 30 seconds until fragrant.
  3. Add chopped spinach and cook until wilted, about 2–3 minutes. Remove from heat and allow to cool slightly. Squeeze out excess moisture.
  4. In a mixing bowl, combine spinach, feta, mozzarella, Parmesan, egg, almond flour, oregano, salt, and black pepper. Mix until well combined.
  5. Scoop tablespoon-sized portions onto the prepared baking sheet and flatten slightly into thin rounds.
  6. Bake for 12–15 minutes or until edges are golden and crisp.
  7. Allow crisps to cool for 5 minutes before serving to firm up.
