Description

Mei Fun is a popular Chinese dish made with thin rice noodles stir-fried with vegetables, protein (such as shrimp, chicken, or pork), and a savory sauce. It’s quick to prepare and packed with flavor, making it a great option for a weeknight dinner.


Ingredients

  • 6 ounces rice vermicelli noodles (mei fun noodles)
  • 2 tablespoons vegetable oil, divided
  • 2 large eggs, lightly beaten
  • 1/2 pound shrimp, peeled and deveined
  • 1/2 small onion, thinly sliced
  • 1/2 red bell pepper, thinly sliced
  • 1 carrot, julienned
  • 2 cups shredded napa cabbage
  • 2 scallions, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon Shaoxing wine (or dry sherry)
  • 1/2 teaspoon sugar
  • 1/4 teaspoon ground white pepper
  • Optional: chili oil or hot sauce for serving

Instructions

  1. Soak the rice noodles in warm water for about 30 minutes or until softened. Drain and set aside.
  2. In a small bowl, mix together the soy sauce, oyster sauce, Shaoxing wine, sugar, and white pepper. Set aside.
  3. Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat. Add the beaten eggs and scramble until just set. Remove and set aside.
  4. Add the remaining tablespoon of oil to the wok. Add shrimp and cook until pink and opaque, about 2-3 minutes. Remove and set aside.
  5. Add the onion, bell pepper, carrot, and cabbage to the wok. Stir-fry for 2-3 minutes until just tender.
  6. Add the drained noodles to the wok along with the sauce mixture. Toss to combine and cook for 2-3 minutes until heated through.
  7. Return the eggs and shrimp to the wok. Add scallions and toss everything together. Cook for another minute.
  8. Serve hot, with chili oil or hot sauce if desired.

Notes

  • Soak noodles just until tender to prevent them from becoming mushy during stir-frying.
  • You can substitute shrimp with chicken, pork, or tofu for a different protein option.
  • Adjust vegetables based on what you have on hand—snow peas, mushrooms, or bean sprouts work well.
