Description

A hearty and flavorful casserole that combines savory cornbread with seasoned ground beef, tomatoes, green chilies, and melted cheddar cheese. Perfect for feeding a crowd or enjoying as a comforting weeknight dinner.


Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 1 packet taco seasoning
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (4 oz) green chilies, chopped
  • 1 cup shredded cheddar cheese
  • 1 box cornbread mix
  • 1 egg
  • 1/3 cup milk
  • 1/4 cup sour cream
  • 1 tablespoon olive oil
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Heat olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon.
  3. Add the chopped onion and cook for 3 to 4 minutes until softened.
  4. Stir in taco seasoning, diced tomatoes with their juices, and green chilies. Simmer for 5 minutes to combine flavors.
  5. In a medium bowl, combine the cornbread mix, egg, milk, sour cream, cumin, salt, and pepper. Mix until smooth.
  6. Grease a 9×13-inch baking dish and spread half of the cornbread batter evenly in the bottom.
  7. Layer the beef mixture over the batter, then spread the remaining cornbread batter on top.
  8. Sprinkle shredded cheddar cheese evenly over the top.
  9. Bake for 30 to 35 minutes, or until the cornbread is golden brown and a toothpick inserted in the center comes out clean.
  10. Allow to cool for 5 minutes before slicing and serving.
