Ingredients
- 1 lb ground beef
- 1 medium onion, chopped
- 1 packet taco seasoning
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 can (4 oz) green chilies, chopped
- 1 cup shredded cheddar cheese
- 1 box cornbread mix
- 1 egg
- 1/3 cup milk
- 1/4 cup sour cream
- 1 tablespoon olive oil
- 1/2 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- Heat olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon.
- Add the chopped onion and cook for 3 to 4 minutes until softened.
- Stir in taco seasoning, diced tomatoes with their juices, and green chilies. Simmer for 5 minutes to combine flavors.
- In a medium bowl, combine the cornbread mix, egg, milk, sour cream, cumin, salt, and pepper. Mix until smooth.
- Grease a 9×13-inch baking dish and spread half of the cornbread batter evenly in the bottom.
- Layer the beef mixture over the batter, then spread the remaining cornbread batter on top.
- Sprinkle shredded cheddar cheese evenly over the top.
- Bake for 30 to 35 minutes, or until the cornbread is golden brown and a toothpick inserted in the center comes out clean.
- Allow to cool for 5 minutes before slicing and serving.
Notes
- Substitute ground turkey for a lighter option.
- Add sliced jalapenos for extra heat.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
