Ingredients

  • 1 tablespoon peanut butter, softened
  • 1/2 tablespoon maple syrup
  • 1/3 cup oats
  • 2 tablespoons vanilla protein powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon water
  • 1 cup frozen berries
  • 1 tablespoon chia seeds
  • 1/2 tablespoon maple syrup, honey, or sugar (optional)

Instructions

  1. In a small bowl, mix the peanut butter, maple syrup, oats, protein powder, cinnamon, and water until a crumble texture forms. Set aside.
  2. Add the frozen berries to a small microwave-safe dish and microwave for 1 minute to soften.
  3. Stir in the chia seeds and optional sweetener. Microwave for another 1 minute until the berries begin to thicken.
  4. Spread the crumble topping evenly over the berry mixture. Microwave for about 2 minutes until the topping is set and the filling is bubbling, checking after 1 minute 30 seconds.
  5. Carefully remove from the microwave and serve warm with yogurt, whipped cream, or ice cream if desired.
