Description

These Middle Eastern Kofta Kebabs are a flavorful mix of ground beef, onions, herbs, and spices, shaped onto skewers and grilled to perfection. They’re juicy, aromatic, and perfect for serving with rice, pita, or salads.


Ingredients

  • 1 lb (450g) ground beef or lamb
  • 1 small onion, grated or finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground allspice
  • 1/4 tsp cayenne pepper (optional)
  • Salt and black pepper to taste
  • Skewers (if using wooden skewers, soak in water for 30 minutes)

Instructions

  1. In a large mixing bowl, combine ground meat, onion, garlic, parsley, cilantro, and all the spices. Season with salt and pepper.
  2. Mix the ingredients thoroughly using your hands until well combined and the mixture holds together.
  3. Divide the mixture into equal portions and shape each portion around a skewer into a long, sausage-like shape.
  4. Preheat a grill or grill pan over medium-high heat. Lightly oil the grill grates to prevent sticking.
  5. Grill the kebabs for about 4-5 minutes on each side or until cooked through and browned on the outside.
  6. Remove from grill and let rest a few minutes before serving.

Notes

  • You can use a mix of beef and lamb for richer flavor.
  • Serve with hummus, tzatziki, or a fresh cucumber salad.
  • These kebabs can also be baked or cooked in a skillet if a grill is not available.
