Description

These mini chicken fajitas are a quick and easy meal that’s perfect for kids or a fun appetizer. Packed with seasoned chicken and colorful veggies, they’re served in soft tortillas for a tasty handheld dish.


Ingredients

  • 1 tbsp vegetable oil
  • 2 skinless chicken breasts, sliced into thin strips
  • 1 tsp smoked paprika
  • 1 garlic clove, crushed
  • 1 red pepper, deseeded and sliced
  • 1 yellow pepper, deseeded and sliced
  • 1 red onion, sliced
  • 4 mini flour tortillas
  • 50g cheddar cheese, grated
  • 2 tbsp sour cream
  • 1 small handful coriander leaves (optional)

Instructions

  1. Heat the oil in a frying pan over medium heat. Add the chicken strips, paprika, and garlic. Cook for 5-7 minutes until the chicken is cooked through.
  2. Add the sliced peppers and red onion to the pan. Cook for another 5 minutes until the vegetables are softened.
  3. Warm the mini tortillas in a dry pan or microwave.
  4. Divide the chicken and vegetable mixture between the tortillas.
  5. Top with grated cheese and a dollop of sour cream. Sprinkle with coriander leaves if using.
  6. Serve immediately while warm.

  • You can swap chicken for beef or a vegetarian alternative like tofu.
