Description
These mini chicken fajitas are a quick and easy meal that’s perfect for kids or a fun appetizer. Packed with seasoned chicken and colorful veggies, they’re served in soft tortillas for a tasty handheld dish.
Ingredients
- 1 tbsp vegetable oil
- 2 skinless chicken breasts, sliced into thin strips
- 1 tsp smoked paprika
- 1 garlic clove, crushed
- 1 red pepper, deseeded and sliced
- 1 yellow pepper, deseeded and sliced
- 1 red onion, sliced
- 4 mini flour tortillas
- 50g cheddar cheese, grated
- 2 tbsp sour cream
- 1 small handful coriander leaves (optional)
Instructions
- Heat the oil in a frying pan over medium heat. Add the chicken strips, paprika, and garlic. Cook for 5-7 minutes until the chicken is cooked through.
- Add the sliced peppers and red onion to the pan. Cook for another 5 minutes until the vegetables are softened.
- Warm the mini tortillas in a dry pan or microwave.
- Divide the chicken and vegetable mixture between the tortillas.
- Top with grated cheese and a dollop of sour cream. Sprinkle with coriander leaves if using.
- Serve immediately while warm.

- You can swap chicken for beef or a vegetarian alternative like tofu.
