Description

Soft, buttery mini sugar cookies rolled in colorful sprinkles and baked to perfection. These bite-sized treats are festive, tender, and perfect for parties or gifting.

Ingredients

  • 1 cup + 2 Tablespoons (135g) all-purpose flour
  • ¾ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup (113g) unsalted butter (melted)
  • ⅔ cup (132g) granulated sugar
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract (optional: +¼ teaspoon almond extract)
  • ⅓ cup (33g) sprinkles (not non-pareils)

Instructions

  1. In a large bowl, whisk together the flour, baking powder, and salt. Set aside.
  2. In a medium bowl, whisk together the melted butter, sugar, egg, and vanilla extract (and almond extract if using) until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir gently with a spatula until the dough starts to come together. Fold in the sprinkles and mix until fully incorporated. Cover and chill the dough in the refrigerator for at least 1 hour and up to 3 days.
  4. Using a ½ teaspoon measure or mini cookie scoop, roll the dough into small balls. Press the tops into additional sprinkles if desired. Place dough balls on a plate and refrigerate for 15 minutes.
  5. Preheat the oven to 350ºF (177ºC). Line a large baking sheet with parchment paper or a silicone baking mat.
  6. Place no more than 12 dough balls on the prepared baking sheet. Bake for 8–9 minutes, until the edges are set. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. Store covered at room temperature for up to 1 week or freeze for up to 2 months. If baking from frozen, add 1–2 extra minutes to the bake time.

Notes

  • Chilling the dough helps prevent spreading and improves flavor.
  • Avoid using non-pareils as they may bleed color into the dough.
  • Cookies freeze well baked or unbaked for up to 2 months.
  • For uniform size, use a mini cookie scoop.
