These Mocha Energy Bites are a healthy, no-bake snack made with dates, almonds, cocoa powder, and coffee. They’re paleo, vegan, and gluten-free—perfect for a quick energy boost or post-workout snack.
Ingredients
- 1 cup Medjool dates (about 10 large dates, pitted)
- 1 cup dry roasted almonds (unsalted)
- 2 tablespoons cacao powder
- 1 tablespoon ground coffee (or instant coffee)
- 1 tablespoon water
- 1/8 teaspoon salt
Instructions
- Place the almonds in a food processor and blend until they are finely chopped.
- Add the pitted dates, cacao powder, ground coffee, water, and salt to the processor.
- Blend until a sticky dough forms and all ingredients are well combined.
- Scoop out about 1 tablespoon of dough and roll into a ball. Repeat until all dough is used.
- Store the energy bites in an airtight container in the fridge or freezer.
Notes
- Use fresh, soft Medjool dates for best texture. If your dates are dry, soak them in warm water for 5-10 minutes and drain before using.
- Instant coffee can be used instead of ground coffee for a more intense flavor.
- These bites can be stored in the fridge for up to 2 weeks or frozen for longer shelf life.
