Description
Monterey Spaghetti is a cheesy, hearty baked pasta dish loaded with seasoned ground beef, bell peppers, tomatoes, and plenty of Monterey Jack cheese for a comforting family-friendly meal.
Ingredients
- 12 oz spaghetti
- 1 lb ground beef
- 1 small onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes, drained
- 1 (10 oz) can diced tomatoes with green chilies (Rotel), drained
- 1 (10.5 oz) can cream of mushroom soup
- 1 cup sour cream
- 2 cups shredded Monterey Jack cheese, divided
- 1 tsp chili powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Cook the spaghetti according to package directions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess fat.
- Add chopped onion, bell pepper, and garlic to the skillet. Cook until vegetables are tender.
- Stir in diced tomatoes, tomatoes with green chilies, cream of mushroom soup, sour cream, chili powder, salt, and pepper. Simmer for 5 minutes.
- Add the cooked spaghetti to the meat mixture and toss until well combined.
- Transfer the mixture to the prepared baking dish and sprinkle 1 1/2 cups of Monterey Jack cheese on top.
- Bake for 20-25 minutes, or until cheese is melted and bubbly.
- Sprinkle remaining cheese on top and bake for an additional 5 minutes if desired. Let rest for 5 minutes before serving.
Notes
- You can substitute ground turkey for a leaner option.
- Add sliced black olives or jalapeños for extra flavor.
- Make ahead and refrigerate up to 24 hours before baking.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
