Description

Monterey Spaghetti is a cheesy, hearty baked pasta dish loaded with seasoned ground beef, bell peppers, tomatoes, and plenty of Monterey Jack cheese for a comforting family-friendly meal.


Ingredients

  • 12 oz spaghetti
  • 1 lb ground beef
  • 1 small onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, drained
  • 1 (10 oz) can diced tomatoes with green chilies (Rotel), drained
  • 1 (10.5 oz) can cream of mushroom soup
  • 1 cup sour cream
  • 2 cups shredded Monterey Jack cheese, divided
  • 1 tsp chili powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Cook the spaghetti according to package directions until al dente. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess fat.
  4. Add chopped onion, bell pepper, and garlic to the skillet. Cook until vegetables are tender.
  5. Stir in diced tomatoes, tomatoes with green chilies, cream of mushroom soup, sour cream, chili powder, salt, and pepper. Simmer for 5 minutes.
  6. Add the cooked spaghetti to the meat mixture and toss until well combined.
  7. Transfer the mixture to the prepared baking dish and sprinkle 1 1/2 cups of Monterey Jack cheese on top.
  8. Bake for 20-25 minutes, or until cheese is melted and bubbly.
  9. Sprinkle remaining cheese on top and bake for an additional 5 minutes if desired. Let rest for 5 minutes before serving.
